We were excited to return as an exhibitor at "Every Chef Needs a Farmer, Every Farmer Needs a Chef". This event connected B.C farmers, seafood producers, chefs and members of the food and beverage industry to create more opportunities to bring BC food to plates across the province.
This is such a great event to connect with chefs and distributors in BC who are looking for local products. We get an opportunity to showcase our product, get people to try it, and explain all our about fishery and our family.
Chef Josh never ceases to amaze us, and he didn't disappoint at this event. We served our scallops in two different ways:
Left - Cold smoked swimming scallops with a maple shallot dressing topped with crispy celery root
Right - Swimming scallops (just adductor) seared and marinated. Josh smoked and dried the scallop roe and served the scallop and roe with an apple chilli relish garnished with wild cress.
